I substitute the plain flour for spelt and reduce sugar by 1/4

Apple Pear and Raisin cake

2 apples

3 pears

160g raisins

100g ground almonds

100g coconut or brown sugar

200g buckwheat flour

1 tsp bicarbonate of soda

1 tsp baking powder

200ml milk or almond milk

1.5 tbs rapeseed, olive or sunflower oil

  1. Preheat oven to 180C

  2. Line a 23cm cake tin with baking paper.

  3. Place ground almonds, sugar, flour, bicarb and baking powder in a large bowl and mix until no lumps

  4. Peel and grate one of the pears and both apples into the bowl. Add the raisins and mix well.

  5. Add the milk and oil and mix to a smooth batter

  6. Cut last 2 pears into think slices and place on the bottom of the lined tin. I do this with a mandolin.

  7. Pour cake batter on top and bake for 35-40 mins
